To take full advantage of everything they have to offer, nuts and seeds should be activated.
Nuts and seeds contain something called Phytic Acid – which binds to minerals like iron, zinc, magnesium and calcium in the digestive tract, making them unavailable to us. They also contain enzyme inhibitors which occur naturally, preventing nuts and seeds from sprouting prematurely. The inhibitors clog up and pretty much deactivate the active side of an enzyme, which is why unsprouted nuts can be difficult to digest.
Soaking and activating nuts and seeds diminishes the phytic acid and essentially switches off their enzyme inhibitors, making all the nutrients available to us. Soaking dried nuts tells the nut that it is time to germinate so it can switch off these elements and begin the sprouting process. Magic Garden Nuts and Seeds are gently dried at 46°C to preserve living enzymes and vital nutrients.
